With the fads of low carbohydrate diets, who eats a big plate of pasta anymore? I was thinking this as I sat in upstate NY while my wife was making a pot of sauce, “gravy” for my Italian friends. The short answer to that question is, “I do.” I love home cooked Italian food and when people ask me what I pair with these foods, I say look to the source.
